MORNAY SAUCE--GREAT FOR PASTA

Makes one cup and is easy to double recipe--
1T unsalted butter
1T all purpose flour
1C whole or 2% milk
1/8t salt
pinch of freshly ground pepper
freshly grated nutmeg to taste
1/2 coarsely grated Gruyere or Comte' cheese (about 4oz )
Melt butter in a heavy bottom saucepan over medium heat. Stir in flour and cook stirring constantly, about 1 minute. (DO NOT LET MIXTURE BROWN)
Add milk, whisking constantly. Bring to a low boil and cook stirring about 2 minutes. Add seasonings. Remove from heat and stir in cheese. Serve immediately. This is easy and taste great.
