MANGO SALSA SAUCE

The first time I ate a mango, was in the Philippines. Both Jackie's husband and mine work there. At that time our children were living with us. Two families living in a different country. We were next door neighbors. We loved it. Our daughters became friends and attended school together. This is where I met my dear friend and have been lucky enough to live close to each other. We were at Church this morning and I always wondering why some people think they are better than others. I always thought, we all were created equal. Makes you think....................

Mangoes can be purchased green and allowed to ripen at room temperature.
Makes 2 Cups
2 ripe mangoes, peeled
2 scallions, thinly sliced
2T chopped cilantro or Chinese parsley
1T grated fresh ginger
Juice of 1 lime
1/2 soy sauce
2 drops Tabasco sauce
Very good on grilled fish or chicken
1. Cut the flesh off both sides of each mango, as close to the large flat seed as possible. Trim any extra from around the edge of the seed. Chop finely.
2. In medium bowl, combine the mangoes and remaining ingredients.
3. Refrigerate.
