Arugula Orzo

1C orzo
1/2 C chicken broth
1 small red bell pepper finely chopped, about 1/2 cup.
1 pkg. ( 4 oz ) baby arugula about 2 cups
1 clove garlic chopped
2 t grated Parmesan cheese
2 T chopped kalamata olives
#1. Cook orzo according to package directions. In 12" skillet, bring broth and red pepper to a boil. Reduce heat to medium and cook 2 minutes more.
#2. Stir in arugula and garlic. Cook 1 minute, or until just wilted.
#3. Stir in orzo, cheese, and olives. Add 1/4 t black pepper if desired.

It is supposed to snow 6-12 inches with high winds. There is nothing like a winter storm watch in Wisconsin. People will prepare for the worst and others will hope for the best. I cleaned Mother's house today, giving my daughter a break. Took my Mother to the beauty shop for a perm. Took my sister who had the brain surgery twice to the store and bank. Ran to fill the gas tank on my daughter's jeep and Mc Donalds for Lukas' for a lunch treat. It is good to be home, when you can help out. Help someone today, I know my dear friend Jackie helps others everyday. Everyone needs a Jackie in their life, as long as you are willing to be a Jackie too!
