EGG TOSTADAS

I thought I would give a recipe today. I have been dealing with a kidney stone for a couple of days and if any of you have gone through this, you know it screws up your whole existence.

This recipe makes 6 servings
In a sauce pan, cook 1 can (16oz) refried beans and 1 tsp., each cumin and chili powder 2 minutes. In a bowl, combine 6 lightly beaten eggs; 1 jar (2oz) pimientos, drained, and 1/4 cup chopped scallions. In a skillet heat 2T butter; add eggs and cook 4 minutes or until set. Place 6 toasted corn tortillas on 6 plates. Divide beans, eggs, and 1/2 cup salsa and shredded Cheddar cheese among tortillas. Very easy and tastes good. Have a good day!
