NFC PLAY OFF SALSA VERDE

This is GREAT on toasted rounds or french bread. Take a tablespoon of this sauce and place it on a piece bread. Delicious!!!!!!!!!!!!!!!!
1 Large tomato, diced
4 large cloves of garlic, finely chopped
2 bunches of parsley, stems removed and finely chopped
1 2oz jar of sliced pimientos, drained and finely chopped
1 T capers
1/4 C red wine vinegar
1/2 C olive oil
1/4 C vegetable oil
1/4 t freshly ground pepper
In a large bowl mix all chopped ingredients and capers together. Add vinegar and mix well. Slowly add both oils to all ingredients. The oil will absorb all the flavors. Enjoy this salsa and the NFC championship game. GO PACK!
